ONION CHUTNEY
  • 600g onions
  • 200g brown sugar
  • 100ml port
  • Salt
  • Freshly ground black pepper
  • 2-3 tbsp balsamic vinegar
MINI BURGERS
  • 800g minced beef
  • 2 tsp salt
  • 2 tsp pepper
  • 2 tsp teriyaki sauce
  • 1-2 tsp Worcester sauce
  • 4 tbsp of oil
  • 1 bag of rocket
  • 12 small slices of Cheddar cheese (approximately 10 g each)
OTHER
  • Small wooden skewers
  • 12 mini burger buns, see recipe
  • Method

  • 1
For the chutney, peel the onions and cut into fine rings or slices. Place in a saucepan with the brown sugar and heat for about 5 minutes. Douse with the port and season with salt and pepper. Simmer the onions uncovered for approximately 35-40 minutes.
  • 2
Once cooked, season the onions with the vinegar and allow to cool.
  • 3
For the burgers, season the minced beef with the salt, pepper, teriyaki, and Worcester sauce. Divide the mixture into 12 small patties.
  • 4
Add 1 tbsp of oil to the Toughened Non-Stick square grill and place over a low-medium heat. Grill 4- 5 of the patties for 4-5 minutes, turning to ensure they are cooked through. Repeat this step with the remaining oil and burgers.
  • 5
Once cooked, drain the patties on kitchen paper.
  • 6
Cut the burger buns in half crosswise and cover the lower halves with the onion chutney and then top with the mini burger, cheese, rocket and bun top.
  • 7
    Serve immediately.
