  • 400g pearl couscous, cooked to packaging instructions
  • Toppings of your choice:
  • Shaved carrots
  • Ripe avocado halves with a squeeze of lemon
  • Shaved raw beetroot
  • Shredded kale
  • Celery curls
  • Crunchy radish slices
  • Chopped spring onion
Easy Green Pesto Style Dressing:
  • 1 cup baby spinach
  • 30g basil
  • 2 Tbsp. toasted pine nuts
  • 100ml olive oil
  • Salt to taste
Handmade Dukkah Spice:
  • 1/2 cup toasted almonds
  • 1/2 cup toasted pistachio
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 tsp toasted sesame seeds
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds

    Easy Green Pesto Style Dressing

    Blend in a food processor until smooth.

    Fold couscous or grain/pasta of your choice through the pesto until well coated.

    Blend to a breadcrumb consistency and keep in an air-tight jaruntil ready for use. It will keep up to a week or so.
